One of Anatolia's oldest grains, coarse durum bulgur is a nutritious powerhouse that pairs naturally with sweet roasted peppers and ripe grated tomatoes.
The Cilin Durum Bulgur Standard
Bulgur pilaf only turns out grain by grain when the bulgur is evenly sized. Coarse bulgur is wheat that has been boiled, dried and cracked into large pieces. Cilin coarse bulgur is sieved, cleaned and sized at our plant in Mersin, so it stays separate and pleasantly chewy instead of turning mushy.
Pro Tips
- Do not rinse: Cleaned and sized under strict sanitary controls, quality packaged bulgur needs no pre-rinsing.
- Caramelize the peppers: Allowing the onions and peppers to sweeten in butter builds the dish's flavor spine.
- Resting: A 15-minute rest under a kitchen towel ensures every grain reaches uniform tenderness.
Our production is TSE and Halal certified and runs under ISO 9001 and ISO 22000 management systems.

- 2 ripe tomatoes, grated
- 1 tbsp tomato paste
- 1 tsp sweet pepper paste

Method
Heat butter and olive oil in a wide pot. Sauté the chopped onion for 2 minutes.

Pour in hot water or broth. Bring to a boil, then tightly cover and reduce heat to low.
